Mom makes chicken curry in the crockpot again, an Indian recipe.

Crock Pot Chicken Curry

2 T. Butter

1 can cream of chicken soup

1 packet dry onion soup mix

1 can cream of mushroom soup

1 can coconut milk or 16 Oz. Sour cream

1 large onion, chopped

2 cups sliced fresh mushrooms

2 cups frozen peas or spinach

5 carrots chopped

6 large boneless, skinless chicken breasts cubed

1 T Garam masala

3 T Curry powder

1/2 teaspoon cayenne pepper

1/2 teaspoon black pepper

Salt and pepper to taste
Melt butter in skillet. Saute onion and mushroom. Set aside.
In large bowl, whisk together soups, coconut milk, and spices.
Place cubed chicken in bottom of crock pot. Pour sauce and veggies (including onion and mushrooms)  on top. Mix it all up. Cook for 6 hours on low or 3 hours on high. I use the auto setting for 6 hours. Serve atop your favorite rice. Enjoy!
